Guatita in English means “Little Belly”, this dish consists mainly of meat, specifically beef tripe. Guatita is a big staple in Ecuador cuisine, the beef is served with a creamy peanut sauce and also served with boiled potatoes. There are multiple spices inside the peanut sauce, they consist of Cumin, Garlic, and Cilantro, the sauce gives extra flavor to the cooked beef. This dish occasionally has picked onions on the side as well.

Llapingachos is a traditional Ecuadoran dish known for its amazing taste and texture. These fried potato cakes are another huge staple of Ecuador cuisine. Llapingachos are simply potato cakes, made from a mixture of mashed potatoes and cheese, they are seasoned with a hint of annatto for flavor.
Once formed into patties they are pan-fried until they are golden brown on the outside while still staying gooey on the inside. Llapingachos are enjoyed across all of Ecuador but mainly enjoyed in the Andean region. Some sides that accompany this dish are Avocado, Aji (a spicy Ecuadorian sauce), and Curtido (a pickled onion salad).

Fanesca is a hearty soup that is deeply engraved into Ecuadorian culture and tradition. This dish is mainly served around Easter time. This Ecuadorian dish symbolizes the union of Indigenous and Spanish influences.
There are many different ingredients inside this delicious soup. The ingredients include Lentils, peas, corn, and broad beans. Bacalao (salted cod) is at the center of the dish, with milk and pumpkin used to make its thick consistency. Fanesca is garnished with boiled eggs, fried plantains, cheese, and empanadas.
